Gluten Free Apple Pie Rolls

These apple pie rolls are absolutely heavenly! And even better they are gluten free and vegan.

I loooooove apple pie or apple crumble….actually I love any food with apples in them!

Unfortunately, I am gluten and dairy intolerant (amongst many other intolerances) so most of the times it’s much easier for me to make things at home from scratch.

I saw a picture of these apple pie rolls on my Pinterest a while back and have been desperate to try them.

I always keep some spring rolls wrappers here as they are so versatile. You can get these in almost any supermarket.

You can use any apple that is firm and crispy such as Granny Smith or Braeburn. Avoid a soft variety as they will go mushy.

I baked my rolls, as you might have read in previous recipes I have posted, I am petrified of frying so I avoid it at all cost. However, if you prefer, you can deep fry them instead. If you prefer to do so, I strongly recommend double wrapping them in the rice paper as they are pretty soft so can easily break.

Ingredients

  • 5-6 Apples
  • 1/3 Cup of soft brown Sugar
  • 1 Tsp Cinnamon
  • Water
  • Rice paper
  • Oil

Preheat your oven to 230°C or 200°C Fan assisted.

Line a tin with parchment paper and brush with oil.

Peel, core and cut the apples into small cubes. Place in a bowl, add the sugar and cinnamon, mix and set aside.

Fill a bowl with hot water (not boiling!) and set up a small working station so you have everything at hand and within easy reach.

Place a sheet of rice paper in the water for about 15 seconds until it starts softening. Rice paper becomes sticky and fragile when wet so handle with care.

Place flat on a chopping board. Add approx. a tablespoon to the middle of the paper.

Fold the bottom and top part over first then fold the sides in.

Place on the baking tray and repeat until all the apples/wrappers are used.

If the wrappers have been soaked for too long and start breaking you can wrap another sheet around it.

Once all the rolls are on the tray, brush all over with oil and bake for 20-25 minutes. Turn halfway through baking.

These rolls are delicious served warm with a sprinkle of icing sugar, or if you want to push the boat out a big scoop of vegan vanilla ice cream. Yummy!
